This week I, and the motley crew of friends and family we've been staying with, have been trying to encourage DD to eat more than her staple diet of 'juuuuice' and Cheerios. So, encouraged by the lovely comments on Ghostwritermummy's recent post about eating 'challenges' and as part of this week's Friday Cooking Club Carnival hosted by the lovely Notes from home, DD, Nana and I baked Mary Berry's Iced Animal Biscuits this morning. They were so easy to make and turned out rather deliciously actually, and we even managed to get DD to eat half of one - hurrah! It's a small step, but it's in the right direction.

Pre-heat the oven to 190C/Fan 170C/Gas 5 and lightly grease two baking trays. Rub 100g (4oz) softened butter into 22g (8oz) self-raising flour until the mixture resembles fine breadcrumbs. Add a few drops of vanilla extract, 100g (4oz) caster sugar, 1 large beaten egg and 1 tablespoon of milk and mix to form a fairly stiff dough.

Then roll the dough out thinly on a lightly floured work surface...

...and cut into animal shapes using cutters. Place on the prepared baking trays and bake in the pre-heated oven for 10-15 minutes until they're golden brown. Try to avoid drooling as the oven fills with the most yummy baking smells.

When they're cooked, let them cool on a wire rack before icing them with a mixture of 100g (4oz) sifted icing sugar, 1 tablespoon of lemon juice and a few drops of food colouring. Add your own choice of 'accessories'. We used mini chocolate drops, raisins and white chocolate buttons.
Ta daaaaa! The final result, all ready for scoffing!

love these, remind me of biscuits I used to make with my mother as a child. Glad it's not just me that has eating challenges.
